Cake:
3 Tbsp. melted butter
3/4 cup brown sugar
1 cup plain flour
2 tsp. baking powder
1/2 cup milk
1 egg
2 Tbsp. corn syrup
1 tsp. vanilla
Sauce:
3/4 cup brown sugar
3 Tbsp. butter
1/2 tsp. vanilla
pinch salt
1-1/2 cups boiling water
Preheat oven to 320 degrees Fahrenheit. Brush a 1-litre ovenproof dish with some of the melted butter.
To make cake, combine brown sugar, flour and baking powder. Add milk, egg, the rest of the melted butter, corn syrup and vanilla and process until just combined. Spread mixture into the baking dish.
To make sauce, combine brown sugar and butter with boiling water and stir until butter melts and sugar dissolves. Stir in vanilla and salt. Carefully pour over the cake mixture in the baking dish. Do Not Stir.
Bake for 35-40 minutes. Let stand for 10 minutes to allow sauce to thicken. May serve with cream, ice-cream, or chopped nuts.
